Instructions:

Sauté the pineapple cubes in a hot wok pan (or other coated pan) without fat. Add the sugar and let it caramelize slightly. Cut the chili into fine strips and add to the pineapple cubes. Season with salt, pepper and coriander. Sprinkle in the chopped young onion greens. For the vinaigrette, mix the white balsamic vinegar with the chopped shallots, honey, sherry and olive oil. Season with salt and pepper. Marinate the cleaned salads with it. Arrange the salads and edible flowers on plates and place the caramelized pineapple cubes in the center.
