(*) Tarhana, a flour made from wheat, dried yogurt, vegetables and spices is used for this specialty. Tarhana is available in Turkish specialty stores.

Remove the skin from the onion and finely dice it. From the bell bell pepper, cut the stem ends with the stems, cut the pods in half lengthwise, remove the seeds and ribs, rinse the halves and cut them into strips. Blanch the tomatoes until they are boiling hot, skin them and dice them.

Melt half of the butter in a soup pot and sauté the onion until translucent. Add the peppers and tomatoes and cook for about 2 minutes. Add the minced meat and sauté while turning. Add the clear soup and bring to a boil. Remove the saucepan from the heat and stir in the tarhana flour. Make the soup at low temperature for about 10 minutes. Season with salt, pepper and paprika.

Cut the bread into cubes. Melt the remaining butter in a frying pan and toast the bread cubes in it until golden brown.
