For the Spinach Tofu Loaves, defrost the frozen spinach in a small saucepan and allow to cool slightly. Squeeze out the water so that it is not too watery.

Cut the onion into small cubes, as well as the tofu. Sauté both in a pan and add to the spinach leaves.
