Try this delicious pasta dish:

One recipe makes 4 to 6 servings.

Remove the skin from the potatoes, rinse and grate (or press through a potato ricer) into a suitable bowl. Cut the apples into quarters, remove the skin, core and grate coarsely. Mix with the sugar, eggs, vanilla sugar, salt and enough flour to make a firm dough.

Preheat the oven to 175 degrees. Form the dough into noodles about 3-4 cm thick, the “Bambser”. Melt clarified butter in a frying pan and fry the Bambser in portions on both sides.

In an ovenproof dish (e.g. Jena jar), layer the Bambser in rows and top with butter flakes. Sprinkle with cinnamon sugar and bake in a hot oven (gas mark 2) for approx. 35 min. Cover the Bambser during the first 20 min.

Serve the hot Bambser with apple puree or compote.
