Brush potatoes well, cut into 1/2 cm cubes. Heat the oil in a coated frying pan and roast the potatoes in it until cooked all around. This takes 20-25 minutes.

Then mix the potatoes with the salmon meat, finely chopped spring onions, finely grated lemon peel, juice of one lemon and crème fraîche and season with salt, pepper and lemon. Put everything together in a gratin dish with a lid, cover and bake in a 200 °C oven for 30 minutes. Remove the lid for the last five minutes and serve on the spot.
