Rub the meat on all sides with the spices. Tie it round with a cotton thread.

Heat the oil in a roasting pan and sear the meat on all sides. Then place the meat in the oven heated to 180 °C and cook for 75 to 90 minutes.

Add the cleaned, chopped leek and the quartered onion to the meat. Pour the beef broth.

Boil the beer in an open saucepan to 2/3. As soon as the meat is colored, brush it a few times with the beer until it is almost used up.

Remove the finished roast from the heat and keep warm. Strain the sauce and add it to the meat.

Serve with potato dumplings and white cabbage. Of course, this is accompanied by a cool Blondes.
