For the rice paper rolls, soften the rice paper in hot water one at a time for 1 minute. Cut the feta into 1cm wide strips and wrap with the bacon.

Place the wrapped feta on the bottom third of the rice paper and season. Fold in the sides and roll up the feta. Preheat the oven to 180 °C and brush the rice paper rolls with oil.

Bake for about 10-15 minutes until crispy.
