A simple but delicious cake recipe:
Mix dough ingredients with an electric mixer until smooth, pour into a greased round baking dish about 24 cm dia [26-cm-ish works wonderfully]. Drain peaches, reserving 3 tbsp of the liquid and set aside. Spread peaches evenly on the dough.
Mix half cup sugar, mascarpone and peach juice until smooth. Spoon over peaches from the center, leaving a 2-inch border all around. Mix remaining sugar and nutmeg (freshly grated) and sprinkle on top.
Bake in the oven at 175 °C for about 35 minutes, remove from the oven and cool in the pan.
Notes: more of a dessert, reminiscent of the apricot clafoutis from e&t. Makes 8 pieces.
