For the pumpernickel bites, wash and dry grapes. Mix Gervais with 1.5 tablespoons of herbs and a little salt, pepper and paprika. Carefully separate pumpernickel slices using a glaze knife or similar.

Place two slices of bread next to each other on a board and spread with Liptauer. Cover with two more slices and press down a little. Now spread with Gervais cream, cover and spread again with Liptauer.

The top layer is again Gervais cream. Insert the grapes on toothpicks into the bread towers and cut squares with a sharp knife. Refrigerate the pumpernickel bites until serving.
