Rinse the meat, dry it. Rub with herbs, crushed garlic, salt and pepper and leave in the refrigerator for one night. Wrap in roasting foil, cook in heated stove at 190 °C for 2 1/2 hours.

Cut tomatoes crosswise, pour hot water over them, peel and chop. Fry the onion cubes in hot oil. Add tomatoes and let them boil. Add paradeis pulp and season with salt and cayenne pepper. Rinse parsley, dab well and chop finely. Add to the tomato sauce and serve with the meat.

Serve with: potatoes
