A wonderful recipe for all strawberry lovers!
2 halved pork feet 10 boiled eggs
500 g carrots
1 jar of gherkins (370 g) 1 onion
3 cloves of garlic
1 bay leaf
10 juniper berries 2 cloves (no flowers :-)) instant broth to taste vinegar to taste
salt to taste
pepper to taste
buy the pork shoulder with rind, so that the brine also gels nicely.
the preparation is a little bit time consuming, about 4 hours, but the result is worth it.
you need a large saucepan and 4 large glass bowls that fit in the refrigerator.
put all the ingredients, except the vinegar, in the large pot and fill with water until everything is well covered.
then turn on the stove top. When the liquid is warm and the instant broth has dissolved, season and adjust the seasoning if necessary. The broth should taste hearty. Adjust the temperature so that the liquid only “simmers” not like a wash, otherwise the meat will be tough.
after about one hour, add the wine vinegar (not too sparingly).
in parallel, hard-boil the eggs and cut the cucumbers into strips, then rinse the eggs and cool.
after about 4 hours the meat and the 2 tongues are ready.
clean the tongues from the coating and cut them into rough cubes, remove the fat from the meat and cut it into cubes as well. Cut the soft carrots into strips.
