Pasta dishes are always a good idea!
Cut the skin of the sausages and divide the sausage meat into not too small pieces. Heat olive oil in a frying pan and fry the salsiccia pieces on all sides for 5 minutes. They should take on a hearty color. Add the onion and let it color a little bit. Roughly dice the tomatoes, add the garlic and thin strips of peperoncini if desired. Sauté for about 3 minutes, then add the cooked beans, sage and 100 ml of water. Simmer gently for 15 minutes, adding a little water every now and then.
Cook the pasta until just al dente. Drain and add to the salsiccia-bean sauce and cook gently for another 2 minutes. Season with pepper and serve immediately. Serve with Parmesan cheese.
