To make the papaya chutney, put all the ingredients in a pot and bring it to a slow boil.
Let it boil until the papaya has softened. Let it continue to cook until thickened.
Stir the sauce every now and then.
Put the chutney in clean lockable containers, let it cool and put it in a cool place.
