For orange spinach salad, clip spinach leaves from stems, chop larger leaves if necessary. Wash well and spin dry.
Grate orange zest into a blender jug, add the well washed dried herbs, the vinegar, water and oil and some pepper and salt. Blend well with a hand blender.
Put spinach leaves in a salad bowl, fillet the orange and add it, pour dressing over it. Serve the orange spinach salad immediately.
