For the nectarine muffins, preheat the oven to 180 °C and fit a muffin tin with 6 paper cups. Wash the nectarine and cut into small pieces.
Warm the summer butter a little so that it becomes soft. Quickly mix the spelt flour, baking soda, sugar, egg and butter in a bowl (by hand or with a mixer) and pour into the paper cups.
Divide the nectarine pieces among the 6 ramekins and press them slightly into the batter. Place the muffin tin in the preheated oven and bake for about 25 to 28 minutes – you may need to do a stick test!
Remove the nectarine muffins from the mold, let cool and enjoy!
