Chop the mushrooms coarsely, chop the tomatoes coarsely, shorten the spring onions and chop the white and light green parts. Heat a tablespoon of olive oil in a frying pan and sauté the mushrooms and spring onions until all the liquid has disappeared from the mushrooms. Remove from heat.
