Chef : Nexty Stocker, Mr-Freudenberg Preparation – Remove peel from apples, cut out and quarter with sugar juice of one lemon and 1/2 cinnamon stalk cook until soft, crush – Soak gelatin in cold water – Whip cream Preparation – Apple puree, sugar and egg white in a water bath while stirring continuously to 50 C warm – gelatin in the water bath melt and mix under it cooled stir – whipped cream pull exactly under the cold apple whipped cream – Fill into glasses and put cooled – garnish with fresh fruit Note – This can be a cold fruit sauce (eg. raspberry sauce) can be served.
