Instructions:

In a large saucepan, sauté sausage until fat is rendered. Then add celery, onions and parsley and saute at a mild temperature until soft. Add the remaining ingredients and make while stirring over medium heat. Reduce the temperature and simmer on low heat with the lid closed until the lentils are soft.

Take out a mound of cooked lentils and mash until creamy, return to the saucepan for another time. Simmer gently for another 10 minutes, stirring throughout, and bring to the table on the spot.
