Remove the package of filo dough from the refrigerator approx. 10 min. before processing. Preheat oven to 180° C. Gently mix feta cheese, spinach, onion and garlic, season with salt and pepper. Brush 3 pastry sheets with oil and place in a greased baking dish so that the pastry hangs over the edge. Pour filling into baking dish, place cherry tomatoes in center and drape overhanging dough nicely all around. Drizzle with oil and sprinkle with fresh thyme. Bake in the preheated oven on the bottom rack for about 30 minutes until golden brown.
