Christmas holiday menu – Amuse-gueules Peel and slice the apple, cut out the core. Heat butter and one tbsp sugar, caramelize the two largest apple slices in it, the rest can be nibbled. Put the caramelized apple slices in an ovenproof dish and place a slice of goat cheese on top of each.

Coarsely grate the potatoes, season with salt, pepper, nutmeg and thyme. Roast two small rösti in clarified butter until crispy. Put the goat cheese under the broiler for two minutes, arrange on the finished rösti and garnish with the thyme sprig.
