Instructions:

* Fish fillets steamed in lettuce leaves with lemon-dill sauce

1.wrap the fish check the fish for bones, cut into 4 squares ( wrap better than rectangles ). Lightly s+p. Remove outer lettuce leaves carefully without tearing them. Turn off temperature, open steamer and rest fish 1-2 min. 3. melt 1 tbsp butter for the sauce. Add onion, sauté 1 min without browning. Add lemon zest and juice, bring to simmer. gradually add butter heartily. Sauce should thicken slightly. Stir in dill and season with s+p. If fish is not done, keep sauce warm on turned off stove top. 4. serve Carefully place the fish on warmed plates, pour the sauce around it. Serve with long grain rice and glazed carrots.
