For the curd banana casserole, cut off the ends of each lemongrass and peel off the outermost peel. Then wash the lemongrass and chop finely.

Wash the lemon (or lime) and finely grate the entire peel. Squeeze one half of the lemon. Peel and finely chop the 2 cm piece of ginger.

Preheat the oven to 180 degrees. (top and bottom heat or approx. 160 degrees convection oven). Meanwhile, peel and halve the bananas.

Then place them side by side in the buttered baking dish. Spread the lemon juice evenly over the bananas.

Place the yolks of the separated eggs in a bowl with the sugar and butter and beat with a mixer until creamy.

Add the chopped lemongrass, the zest of the lemon, the ginger, the semolina and the curd and stir it in. Then beat the egg whites with a mixer until beaten egg whites and fold in.

Then pour the batter over the bananas and place the casserole in the oven for about 45 minutes on the middle rack until golden brown.

Before serving, dust the quark banana casserole with powdered sugar.
