Sift the flour into a suitable bowl and press a well in the center.

Crumble in the yeast and stir with a little sugar, half of the milk and a little flour to form a dampfl.

Cover and let rise for 15 minutes. Add the rest of the sugar, the rest of the milk, the salt, the lemon and orange peel, the eggs and the butter in flakes and spread evenly over the flour, knead together with the dampfl and let rise for 15 minutes.

Soak the raisins and currants in hot water for 2 minutes, then pour off the water. Dab the raisins and currants and knead with the candied orange peel. Let the dough rise repeatedly for 15 min.

Heat the fat to 160 °C. Using 2 floured tablespoons, make small doughnuts from the dough and bake 6 at a time for 10 minutes in the hot fat until golden brown. After 5 minutes turn the doughnuts with a slotted spoon to the other side.
