For the crusty bread, mix the flour with the spelt bran and spices.

Add the honey. Dissolve the yeast in the lukewarm water and add to the flour, knead everything very well with the hand mixer, gradually add the mineral water. Now knead vigorously with your hands for about 5 minutes and then let the dough rest for about 1 hour.

Knead again and form a nice loaf. Let rest again for about 1 hour.

Preheat the oven to 240 degrees and place a bowl of hot water on the bottom of the oven. Brush the loaf with warm water and sprinkle with a few anise, fennel and cumin seeds to taste. Put it into the hot oven and gradually spray water into the oven with a spray bottle to create a nice crust. After about 10 minutes, reduce the temperature to 200 degrees and bake the bread for another 40 minutes.

Let cool on a grid and serve crusty bread.
