For the vegetable stew, clean the vegetables and cut them into bite-sized pieces. Heat the oil in a pot and add the vegetable pieces.
Cook everything, stirring constantly, until al dente. Season with salt, pepper and coriander and sprinkle with the herbs.
Preparation Tip:
Rice or a fresh baguette goes well with the colorful vegetable stew. If you like, sprinkle a little chopped feta on top.
