For the chicken tajine, first peel and finely grate the onion. Peel and crush the garlic. Wash and finely chop the coriander. Peel and finely grate the ginger. Pit the olives if necessary.

Mix all the ingredients for the marinade and marinate the chicken chicken in it for at least 1 1/2 hours.

In a tajine, sauté the chicken drumsticks in the olive oil. Pour in the remaining marinade and cover with water until halfway. Bring to a boil, turn down the temperature, put the lid on and simmer for about 40-50 minutes.

Add olives and season with lemon juice, half of the oregano and salt and pepper. Simmer again for about 15 minutes. Serve chicken tajine sprinkled with the remaining oregano.
