For the chanterelle sauce, chop the onion and the white parts of the spring onions and sauté in olive oil until translucent.

Cut the green parts of the spring onions into rings. Clean the chanterelles, cut into smaller pieces if necessary and sauté with the onions for 10 minutes until most of the liquid has evaporated.

Stir in the flour. Pour in the soy sauce. Add salt and sugar and simmer for another 5 minutes. Stir in onion rings and dill and season with lemon juice and salt.

The chanterelle sauce goes well with bread dumplings.

Preparation Tip:

Instead of dill, you can also use parsley for the chanterelle sauce.
