Instructions:

For the cauliflower casserole, preheat the oven to 160 degrees and grease a baking dish. Cook the cauliflower florets in boiling salted water for 5 minutes, drain and place in the baking dish.

Heat the olive oil in a pan and sauté the onion, garlic and bacon. (The onion should brown).

Pour the onion mixture over the cauliflower in the baking dish. Melt the butter in a small skillet and sauté the flour in it for 1 minute. Deglaze with a dash of milk and stir well.

Add the remaining milk and simmer, stirring, until the sauce is creamy. Remove the sauce from the heat and add the Gouda, nutmeg, pepper and salt and stir.

Pour the sauce over the cauliflower and sprinkle with Parmesan cheese. Bake briefly in the oven at top heat.

Preparation Tip:

The cauliflower casserole tastes great with a fresh green leaf salad.
