The recipe makes a little bit 60 pieces of canestrelli.

Take orange liqueur and 3-4 tablespoons of water.

Finely grind the peeled almond kernels, put them in a suitable bowl, stir in the sugar in detail with a wooden spoon. Knead in orange blossom water heartily until a smooth dough is formed.

Preheat the oven to 150 degrees. Roll out the dough in small portions as thick as a finger. Form even squiggles out of it, spread evenly on lightly greased baking sheets.

Place the baking sheets in order on the top rack of the heated oven. Dry rather than bake. Remove, glaze while still hot with a little orange syrup. Place in colored confectionery cases, cool.

Mix orange marmalade with a squeeze of juice from one lemon until smooth, warm slightly and use as glaze for the almond curls.

It is best to store the almond kringles in a tightly closing tin box-they will soften a little.
