Season the well-dried chops with salt and pepper, turn them in flour on the other side, dip them in the beaten egg and then turn them in the breadcrumbs mixed with the cheese on the other side. Place the chops on a board for a moment to allow the breading to set.

Heat the fat in a frying pan and fry the chops for 5 to 6 minutes on each side over medium heat.

Serve with steamed chicory, roast potatoes made from raw potatoes and a tomato sauce or mushroom.
