For the leaf spinach à la quattro formaggio, finely dice the shallots and finely chop the garlic. Heat butter and 1 tbsp. oil in a large pot.

Sauté the shallots over medium heat until translucent. Sauté the garlic briefly. In the meantime, wash the spinach. Add half of it to the onion/garlic mixture and cover over medium heat until combined.

Stir in the remaining spinach and let it collapse without a lid. Remove the pot from the heat. Stir in the cheese and creme fraiche. Season the spinach leaves à la quattro formaggio with salt and pepper.
