Instructions:

Put banana flower slices with juice of one lemon in cold water and soak for 1 hour. Cook (or steam) duck in a shallow frying pan with a little water until tender. Cool, remove skin and cut iinto narrow strips. Drain banana blossoms, then mix in a large baking bowl with fish dip, raw peanuts, ginger, ram and duck. Arrange on a platter and sprinkle with fried shallots. Garnish with cilantro greens.

Tips: If banana blossoms are not available, you can use shredded celery just the same. The duck breast can be baked, roasted or grilled the same way.
