For the apricot jam with white chocolate, wash and clean the apricots, quarter them and blend them with the water using a blender.

Mix well with the jelling sugar, place in a large enough pot on the stove. Prepare according to directions on sugar package, and just before finished, gently stir in the chopped chocolate and allow to melt.

Pour into prepared jars, seal and turn the apricot jam with white chocolate upside down to cool.
