For the dough, whisk the flour with the salt and sugar and heap it on the surface. Add the cold fat in flakes on top and chop with two knives until the whole is finely crumbled. Gradually add the cold water and stir in with a fork. Then quickly press together with your hands to form a ball of dough, do not knead – the dough should still be a little bit inhomogeneous, this makes it flaky.

Roll out half of the dough on floured surface a little larger than the mold (about 28 cm ø). Roll the dough loosely onto the corrugated wood, unrolling it leisurely over the mold repeatedly. Spread the pie dish with it, cut the dough into small pieces just above the edge.
