Whisk the water and add it as a binding agent. Add half of the cherries and a good shot of brandy.
Beat three egg whites. Mix three egg yolks with sugar, add kefir, gradually fold in flour and finally fold in the stiff egg whites. Bake a wafer. Place it on a plate and pour the cherries with their juice over it. Garnish with mint.
