For semolina dough, mix fat with sugar and vanilla sugar. Stir in yolks, add semolina and cream, fold in stiff snow and let rest in cold place for 5 minutes.
Place small portions of dough in heated fat with a tablespoon and fry over low heat until crispy on both sides.
Serve the semolina dumplings sprinkled with powdered sugar.

The semolina dumplings are best served with compote.
