Instructions:

To make the Spanish Tortilla, cut the potatoes into small slices and cook in a medium skillet with enough olive oil over medium heat.

In the meantime, briefly beat or mix the eggs in a large bowl.

After about 10-15 minutes of cooking, add the diced onion to the potatoes and cook them together again for about 10 minutes.

Then carefully add the potato-onion mixture to the eggs and stir. At this point, make sure that the oil is drained a bit or left in the pan.

This can be used again for frying out. Now the tortilla mixture can be returned to the pan and fried over medium heat, covered.

After the mixture has set, turn the Spanish tortilla over in the lid or in a large plate and fry again on the other side.

Preparation Tip:

If you like, you can also add small cocktail tomatoes, cheese, sausage, or vegetables to the mass - although this will change the mass. Spanish tortilla also tastes very good with white bread.
