Preheat the oven to 200 °C top/bottom heat for the Parmesan fritters. Cut the Parmesan into fine strips (I use a cheese slicer for this) and place them on a baking tray lined with baking paper. Make sure that there is enough space between the individual Parmesan hips.
Using a pastry brush, brush each strip thinly with olive oil and bake the Parmesan hips until golden brown. This only takes a few minutes, so it’s safer not to let them sit out too long.
