For the Chinese fortune cookies, preheat the oven to 180 degrees. Cover the baking tray with parchment paper. Draw three circles of 8 cm ø each on the paper. Prepare written fortune messages.
Melt the butter in a pan. Separate eggs and beat egg whites in a medium sized baking bowl until slightly creamy. Add butter and granulated sugar and beat until smooth. Fold in flour until batter is smooth.
Using the flat blade of a knife, spread a small blob of the batter on each circle. Bake 5 min until edges of dough are lightly browned. Do not bake more than 2 or possibly 3 Chinese fortune cookies at a time, as alternatively they may harden too quickly and therefore break when folded.
Using a flat knife blade, quickly pull the cookies from the baking sheet. Place the lucky message on each cookie. Fold one cookie at a time into a semicircle and then fold it again over a blunt-edged object, such as the edge of a bowl. Cool all cookies on a wire rack.
