For the berry and curd cakes, break the rusk. Heat the milk and pour it over the rusk. When it is almost soft, mix with the curd.

Cream the butter with maple syrup. Separate the egg, add the egg yolks with the semolina to the butter and continue to whisk. Gradually add the curd cream. Beat the egg whites until stiff and fold them in.

Place the paper cups on a baking tray and pour in the curd dough.

Rinse and dry the berries, cut larger fruits in half. Place the fruit on the dough in the ramekins, press in a little.

Preheat the baking tray to 180 °C (gas mark 3) and bake the berry and curd cakes for about 35 minutes.
