For a 22 cm dia. cake springform pan, place flour, cinnamon and salt in a large enough bowl and make a bulge in the center. Spread butter in flakes evenly along the edge.

Mix sugar, yeast, milk and egg briefly and add to flour form while stirring. Knead by hand to form a smooth dough. Place in a suitable bowl, cover and let rise at room temperature until doubled.

Butter the cake springform pan.

Cut apple into eighths, remove core. Cut the slices into fine slices and mix with juice of one lemon and raisins.

Form the dough into a roll. Cut into 8 pieces and flatten by hand. Put the filling in the middle of the pieces, pull the dough over them and form into balls. Place in the mold with the filled side down, one against the other (arranged in a wreath shape, with a ball in the center). Cover and go just to the edge of the mold.

Place the yeast cake in the center in the 200 °C oven and bake for thirty to thirty-five minutes.

Cool until lukewarm and sprinkle with powdered sugar.
