Instructions:

For the wild garlic barbecue sauce, chop the onion and a large clove of garlic and sauté in a little oil over low heat. Wash the wild garlic and cut into thin, short strips.

Once onions are translucent, deglaze with balsamic vinegar and stir in ketchup, Worcestershire sauce, sugar and tomato paste. Season with chili powder, depending on your preference for heat and type of chili.

A good pinch of Bhut Jolokia powder is enough. Alternatively, of course, a fresh chili pepper can be used. To do this, chop them finely and sauté them with the onion.

Let the sauce simmer gently for about 15 minutes and stir in the wild garlic. Continue to simmer until the desired sauce consistency is reached and cool to room temperature.

Preparation Tip:

The wild garlic barbecue sauce is also excellent for glazing spare ribs, poultry or steaks. To do this, brush the meat with the sauce about 5 minutes before it is ready and continue grilling (the sugar turns it black quickly).
